Bramwell Pub Company to launch new pub concept next week: Bramwell Pub Company is launching a new drinking and casual dining concept called Wild Lime Bar & Kitchen. The bar in Southampton will open to the public on Monday 10 June on Portswood Road, the former site of Varsity. The investment in the bar, which totals more than £300,000, has seen the creation of twenty new jobs. Southampton will be the first of three sites to be converted to Wild Lime Bar & Kitchen with Banbury and Reading to follow before the end of the summer. Sarah Weir, commercial director at Bramwell Pub Company, said: “Through extensive consumer research we have identified a gap in the market. It’s clear that the High Street has some innovation but it’s traditionally in the areas of fashion, coffee shops and casual dining. We want to bridge that gap with an offer that innovates, injects excitement and drives the rise of ‘casualisation’, enabling customers to do what they want, when they want in an all-day trading format. Wild Lime Bar & Kitchen is bright, breezy and laid back; always ‘sunny inside’. The concept has been born from a passion to bring a modern, aspirational and innovative brand to the high street. It was inspired by the new world; their values, culture, food and drink, coupled with exceptional service.” The food offer at Wild Lime Bar & Kitchen has been created following consumer research. The dishes include freshly made pizzas, stacked high burgers and sharing platters through to a range of ‘Under 500 calorie’ plates. With the US East-Coast style pizzas, the dough is worked and stretched by hand before being stonebaked, giving the pizza a puffed crust and a delicious charred crisp base. The crust is then sprinkled with Parmesan before baking to create an amazing flavour. In the pantry-style kitchen, towards the front of the bar, dishes are finished by hand from zesting the oranges for the beet and goats cheese wrap to the dressing of the pea shoot leaves in the vibrant upside-down salads. The same attention to detail has been given to the drinks menu with a range of exciting and fresh cocktails. Some are made with beer; some are made with wine or fizz. Presentation creates a sense of fun with some cocktails served in a jam jar, prohibition style. Beers such as Peroni Nastro Azzurro and Beck’s Vier are available along with some new beers on the block including Brooklyn Lager, Harviestoun’s Bitter & Twisted and a wide and varied selection of some of the best bottled beers that our cousins across the Atlantic have to offer. Working with some of the world’s most exciting wine producers, those who are always up for trying something new, the wine list is a great showcase for some of the most exciting new world wines. Charlotte Williams, general manager of Wild Lime Bar & Kitchen said: “We’re very excited to be opening Wild Lime Bar & Kitchen to the residents and visitors of Southampton. The idea behind Wild Lime Bar & Kitchen is that it is open sunrise, sunset and late. At all times of the day there is something going on. Whether you’re visiting us in the morning for brunch; popping in for lunch during work or after hitting the shops; a place to catch up with colleagues or friends after work; or a place to celebrate a night out on the weekend. The beauty of the site is that because of its design you can drink, dine or do both whilst letting us take care of you, with table service if you want it. As you walk into Wild Lime Bar & Kitchen you are greeted with a light and airy deli style area, which leads through to a comfortable central bar and lounge area with a full service dining section towards the rear of the building. Our aim is to offer customers a place that they can visit whatever the time of day, whatever the occasion.”
